I have purchased the three pack of Cattleman’s split pecan wood for $59.99 that included free shipping several times. It arrived within 5 days and was the perfect size for my Oklahoma Joe's Highland Smoker. I use a charcoal starter chimney and put two loads of hot coals on the backside of my firebox and set two pecan splits on the front wall. I closed the top and kept my side door of firebox open to warm/dry the pecan splits. I then reached into the firebox through the side door with my Oklahoma Joe's smoking gloves (purchased at Academy Sports) and set the two pecan splits on the hot coals. I left the firebox side door open to heat up the split pecan, which should ignite almost immediately. It takes 30-45 min to get your smoker to establish a clean fire with cleaner smoke. Once that is achieved, I then placed one new pecan split against the inside wall to warm and put my brisket (point side toward fire) on the vent side of smoker with water pan near the firebox and close the smoker. I don't like to choke the side door / vent to reduce heat. If necessary from a heat spike, I will prop open the top of the firebox with a split wood. Airflow is so important to clean burning so leave vent wide open or only reduce to 50%. You pay a lot for great wood so learn to manage your firebox fire and enjoy your BBQ!
