The longest and perhaps most important Odyssey of my life has been the search for a partner for my go to no children no wife lunch - the hamburger Holstein. It is a incongruent but brilliant dish and has been hard to pair with wine. The search has been fun but perfection has never been attained, until now that is: BIB’s lastest Portuguese red is bliss on its own right but paired with the Holstein is it is very heaven.
