Your venison was the best l’d ever tasted. Absolutely gorgeous.Flavoursome and tender with almost no gristle.
Kipper, Bacon and ham were all too salty for my taste and the bacon didn’t cook that nicely ie didn’t go crisp without blackening- perhaps that’s what comes of going nitrate free.
The pigeon was an experiment which I won’t repeat given the smell when cooking! Actual breast was tender though.
