I stewed my first packet of diced beef shin for 2 hours but unfortunately this wasn't long enough to make it tender although the flavour was good and our cat relished the few pieces he was allowed for his tea. I stewed my second packet for three hours and the result was superb; the meat was tender and rivalled the most expensive cut for flavour. We had the remainder in sandwiches the next day and it was delicious. I will certainly buy more but will make sure that I leave enough time to stew it for a full three hours.
