The bird took much longer to cook than your 45mins per Kilo it was also very tough and sinewy. Taste was excellent though meat on firm side. Don't think I will be ordering again as a standard gresingham duck is much more tender. I understand this id due probably to the poor duck not getting much exercise. Maybe I went wrong in the cooking but I followed your advice but meat still bloody where wing meets body.
