The goat neck rings were really delicious, marinaded in jerk seasoning and lemon juice for 24 hours, then roasted with coconut milk, carrots and celery. 4 hours on Gas Mark 4 gave us soft, succulent meat, with all the collagen melted away into the sauce. As tasty and good as any stew or casserole made with any more conventional meat
