As a gluten-free vegetarian, it can be difficult to find safe, healthy food when away from home. I'll never forget a particularly pathetic lunch experience a few years ago. We were many hungry hours into a long drive pretty much in the middle of nowhere, and a lone Burger King's only lunch option for me was a cup's worth of frozen/thawed iceburg lettuce with grated cheese and a small slice of droopy tomato. Staring at that pitiful salad (and feeling very sorry for myself), I was determined to find ways to travel with my own food. After I got home from that trip, I started researching. Discovering Good To-Go meals was a real game changer for me! Delicious, safe, easy-to-store and prepare, my GT-G's and a mini stove were always in my duffel.
Then came the pandemic...and traveling sorta fizzled out. A few months ago, I got a craving for the Smoked Three Bean Chili and pulled one out of my stash. Next, I had a Mushrooom Risotto. Then a Kale & White Bean Stew Mexican Quinoa Bowl...Cuban Rice Bowl...Indian Vegetable Korma...I now enjoy my GT-G's several times a week. I love these flavorful meals poured over steamed veggies (yum!).
