My gifts of half-spatchcock and a whole chicken to out-of-state family members were a hit! One will star as the centerpiece of a birthday dinner, another a learning experiment in cooking a bird that's flat (aka butterflied), not fat. What would have made the gifts better? A card enclosure with a short greeting from the giver, and a recipe to go with the chicken. After all, lots of people pack their freezers with chicken breasts and don't know the basics of roasting.
