1.75kg Short Rib of Beef Rack - Really good quality. First time I have left a couple of milimetres of fat on the top, rather than removing the fat entirely. Used a pre-bought rub. Photo is unveiling after 2 hours wrapped in Butchers Paper and towels in a Cool Box - no colling involved obviously! Actually bought 2 Racks, the other is in the freezer and will be coming out next week.
