What a fun class! It ended up just being the 2 of us (me and my nephew) and the whole session was great. You get given design cards to pick from, so you make a choice about what your buns will look like & what colours you'll need before diving into making the dough from scratch (recipe is available to take home if you wish). Whilst the dough is proofing you get to enjoy some freshly made bao (you choose the flavour you want before starting) - we both had the char siu ones which were utterly delicious. We then spend quite a bit of the time using food dyes to colour bits of dough (go from light colours to dark.....don't start with black like I did, even though chef had made this clear haha!). Definitely need dexterity in your hands and fingers for this part! Then we constructed the baos with excellent help and guidance from chef May Ling throughout. We never felt rushed and took our time creating our buns. At the end, chef steams the buns for around 30 mins, and during that time you are encouraged to go for a walk nearby - after a couple hours of sitting it was a nice suggestion. When we returned, our baos looked great - so happy with how they turned out. It's going to be a shame to eat them! We also got a goodie bag with some key ingredients to make them at home. Highly recommend this workshop, so much fun and a great atmosphere. Just make sure you can handle doing a lot of kneading, as that's very necessary for making the baos.
