So far I have made vanilla and mango ice creams and mango and passionfruit low-sugar low-fat jelly combined with low-fat yoghurt. I am making rum and raisin ice cream for Christmas. The beauty is that I can use zymil lactose-free cream and the whole family can be included. I can also add low-sugar jelly crystals to boiled water which is cooled and then added to yoghurt which makes a lower-calorie treat. The gelatine allows me to use yoghurt instead of cream and it still sets like ice cream.”
