I absolutely LOVED my class, I’ve been wanting to learn how to make chocolate for a couple months now after having a bit of a rabbit hole on it back in September of 2025, but I did not expect anything like what I learned today. Paul was amazing, he was so in depth with everything that he explained, taught us incredibly well with super helpful tastings to guide us further on what we were learning about while also explaining how each flavour came to life; shoutout to the 85% Philippines chocolate! The smokiness seriously shined through and made me fall in love with a new chocolate I never knew existed. He even gave us a book recommendation on how to learn more about chocolate as me and my partner left! Thank you so much for such an unforgettable night!
