The Venetian Kitchen: a fresh spring table

In this class, you’ll gather around a spring table inspired by Venice and the countryside. You’ll learn authentic recipes and cooking techniques that celebrate the season’s freshness, all in a convivial and relaxed setting.

- Cicchetti starters: three traditional small bites - a bread‑based one, a fried one, and a marinated one. Perfect to enjoy with your aperitif (aperol spritz or a non‑alcoholic alternative).

- Main course: a vibrant risotto, gnocchi, or pasta dish, chosen according to seasonal produce and market finds.

- Dessert: a classic Venetian sweet treat to accompany your Italian‑style coffee, rounding off the meal with light, fragrant spring flavours.

Sample recipes:

- crostini with fresh peas and stracchino cheese
-fried zucchini blossoms with anchovy or mozzarella
- artichokes alla Veneziana (braised with herbs and white wine)
- lemon and asparagus risotto
- spring gnocchi with garden vegetables, olive oil and parmesan
- tagliolini with clams and wild garlic
- strawberry tiramisù
- zabaione with pan-roasted strawberries

Each recipe is designed to feel like sitting at a Venetian spring table - fresh and light, colourful, and shaped by the abundance of the season.

Had a fun cookery class making a variety of cichetti, mushroom risotto and zabaglione. Fabio was a great teacher and gave a good insight into the Venetian way of life and their food. Agnes a very efficient co-host. Highly recommended

The class was perfect! Fabio is very knowledgeable about everything connected to Venice so we learned a lot about the dishes but also about Venetian history.

I’ve just cooked (and eaten) a delicious Venetian feast led by Fabio and Agnese. Everything was well organised, Fabio’s instructions were very clear, and they both put in a huge effort to make the room charming and the day run well. I personally enjoyed all the information about Venice and its food that Fabio filled our day with. Thank you both.
