This activity is a mindful exploration of flavour, where you will learn to craft two deeply satisfying dishes: classic chāshū ramen and a bold, brothless maze-soba.
Guided by gentle instruction in a peaceful, traditional setting, this is more than just a cooking class – it’s an opportunity to connect with the spirit of Japanese cooking. Your experience begins with a calming welcome drink of Usucha, setting the tone for the creative workshop ahead.
In this masterclass, you will learn:
- How to marinate and braise pork belly or chicken for tender chāshū
- The difference between ramen and maze-soba, and how to balance their unique flavours
- How to make a perfect onsen tamago (hot spring egg) for maze-soba
- The art of crafting tare, the essential seasoning base for both dishes
- How to prepare a seasoned egg for ramen
- The secrets to creating a rich and flavourful ramen broth
- Noodle cooking techniques and how to prepare a variety of delicious toppings
- The principles of Japanese-style plating and presentation
Throughout the workshop, you will be guided through every step, from preparing the chāshū and simmering the broth to cooking the noodles. The experience culminates in a shared meal, where you can enjoy your hand-crafted creations. You will also have plenty to take home, so please bring five 500ml lidded containers.
