In this full-day experience, you will be detail-oriented to:

- Master the art of creating flawless risotto with hints and tips on getting the stock technique right.
- Make the new hot favourite Italian street food – delicious arancini – using leftovers of the risotto in small balls and making a delicious and savoury snack that’s perfect for any time of day.
- Explore the use of specific fresh herbs in Italian cuisine and the significance of seasonal ingredients in creating authentic Italian dishes.
- Cook with garlic, fantastic olive oil, fresh buffalo cheese, and cured meats to create an array of dishes.
- Make your own pizza dough and create a delicious pizza with all your favourite toppings, just like they do in Italy.

The Italian itinerary continues when we break for lunch. Considered to be the most important meal of the day, you will be able to experience more of “The Boot’s” famous exports - fine wines and cold crisp beers in convivial company.

This was a fun day with plenty of hands on action. The teacher was clear and demonstrated each dish before we had a go under her supervision. The class was intimate, just 8, so it was easy to ask questions if needed and everyone ended up with successful results to take home to show off. The kitchen was well laid out and everything was provided that you might need. A minor criticism might be that there was so much equipment it was a bit of a challenge to find a space to leave completed dishes when we moved on to the next dish. We managed. This is a day packed full of near non stop cooking with plenty of kneading a variety of doughs so be prepared for a gentle workout. I note the itinerary is meant to include an exploration of fresh herbs in Italian cooking and a break for lunch. We didn't manage to fit in either although I am sure if I had raised it at the time, it would have been addressed. (Lunch was had but not all at the same time, and it was excellent) I am now looking forward to trying everything at home and impressing all and sundry.
