“Very good class. Sebastiano is certainly passionate about what he does and he is eager to teach what he knows and impart his experience. Sebastiano took us through a range of pizza doughs, their texture, preparation and importantly how they taste. Resting time and temperature was very important with respect to getting the dough right. Temperature was also important for cooking. We learnt that you need a super hot oven, hence the specific pizza ovens. The normal domestic ovens just aren’t hot enough, but Sebastiano did trach us a trick to grt by with a domestic electric oven, which though imperfect, would still kind of get by. Now to try at home.”
