Hidei was only interested in showing me how to sharpen my traditional Japanese knife - the technique he showed me to sharpen my modern Japanese knife has actually badly damaged the finish of the knife and is actually blunter than when I started. I tried to communicate this to him but he was not interested. Only do this course if you have very traditional “single sided” Japanese knives.

Very zen and finally I know how to sharpen my vintage Chinese chopper. Hideo SAN was a very patient teacher and it was a lot of fun.

This was an amazing experience and not what I was expecting at all. Learning how to sharpen a knife properly is very hard work and I woke up the next day with a very sore arm even though I workout daily. A very different technique to what I've come across on line in Youtube videos, and well worth the time and patience. Even from the smallest details of how to test the knife to check it's sharpness, no longer am I reaching for a piece of paper to waste. I highly recommend this class, Hideo was a great teacher and I look forward to taking more of his other classes in ther future
