Dan, gave us an insight into the resons for why we should maintain and service our culinary knives with respect that we unwittingly store our knived without blade covers thus blunting of our knives. I need to be more vigilant with the conditions and stowage of a large array of Chef's knives due to them belonging to my late wife who was a chef with qantas Catering for 26 years. I will need to use your :gift cards" as a bonus for more bookings I will make, as I have found a new way in which I can communicate on a comforting manner, as I have been in denial for friendship since the lost of my wife.

I bought this for my husband and his friend. They have just come back and said it was very well run. The teacher (Dan I think he said) was excellent and very patient. Thank you so much.
