“I'm just a dabbler in the kitchen, but I like working with good equipment. I've got a collection of carefully selected knives and have been wanting for years to learn how to sharpen them on stones. I'm SO glad an internet search led me to this class. I can't stop raving over it! The class is a combination of lecture/demo and hands on practice. Jason had asked us to bring 3 or 4 of our own knives to work on. He began giving us a solid introduction to knives, making a particular effort to include examplees of various types that the seven of us had brought in, so that we each really knew what we were looking to do. Next was a slow, thorough demonstration. When it was time for the practical, I felt nervous but well prepared. Jason and his assistant, Margaret supervised, gave tips, answered questions, and were incredibly kind and helpful. It's hard to express my pride when my first solo effort passed "the paper test." I moved on to my other knives with growing confidence, very glad that the ones I'd brought gave me experience with both Western and Japanese forged blades. Packing up at the end of class, I felt such satisfaction! As I said to Jason, I didn't only want to take a class in how to do this, I want to DO this. I couldn't wait to buy my own stones -- and I didn't have to, because Jason had sets of the equipment we'd used available for purchase. So NEXT weekend I'm going to go through all my other poor, neglected knives and get to work, serene in the knowledge that the knives I've chosen so carefully over the course of my life will have the proper care they deserve and will continue to serve me for as long as I'm here to use them. “Very helpful and informative. The instructors gave a well rounded tutorial on sharpening methods as well as history and knife design. This class is a great option for complete beginners and Youtube cowboys like myself who have seen all the videos but have only managed the make their knives duller. Sam and Margaret gave me a couple minor tweaks and I was slaying sheets of paper in no time.”
