First, let me say that Katelynn is charming. She made the class a lot of fun. Second, my reason for attending the class was to have her look at my recipe for sourdough and see if she could see why my loaves don’t rise much and are always very dense…tasty, but dense. She gave me a couple of tips in that regard. Third, Katelynn sent us home with two loaves of dough that we put together in the class. I baked both and had a very interesting result: One raised very little and was on the dense side, one raised A LOT. So I sent her pictures of both just for yucks. Fourth, Katelynn did a very good job working with everyone, starting from flour, water, and starter to ready to bake dough. So, it was exactly what I would expect in a cooking class – this was my first, by the way. She did it all perfectly. So…all in all, I would say excellent job!!
