The class held at Kesté in lower Manhattan, NY was very enjoyable. It began with a taste of the type of pizza that was going to be taught to be made. After the tasting, the chef/instructor began with an explanation of the the proper type flour to use (type 00 (zero zero)) and the best tomato sauce to use (San Marzano Tomato). Also, after a short quiz of the students to guess how long it would take to bake (using a brick oven with volcanic rocks inside) the pie, the chef/instructor said it would take one (1) minute. We then began the actual class, first we were instructed to wash our hands, and then after that to line up at the counter, where the chef/instructor was to give a demonstration; and we were to work; of how to properly knead the dough. It was here that I was surprised and in that I thought the class was going to teach on how to make the dough, using the zero-zero flour and other ingredients. Thought that were going to be shown how much to mix the ingredients and then how to knead the aforementioned mixture to get the dough to the correct consistency for pizza. Instead, each student was given a square of pre-made dough and then instructed on how to knead the dough into the usual round pizza. After the kneading, we then ladelled and spread sauce, added some home-made mozzarella and then toppings of choice. Toppings offered were mushrooms, peppers, spinach, artichoke, ground sausage, sliced salami (strips) and of course pepperoni. Pizza's were then placed in the oven, baked, placed on platter, sliced and then eaten. Then nutella pizza's were brought out as desert. Again, the class was fun, educational and filling (lol)!!! I would; and do; recommend that if interested in learning a method on how to knead pizza dough, take this workshop.

We had a lot of fun taking this class. Eduardo was a great teacher and kept us laughing. We learned about Neapolitan pizza, how to make the pizza, and got to make the pizza with any toppings we wanted. My favorite part was making the pizza and being apart of the process and eating it! I’d definitely go back to eat dinner one night. The whole staff was great!
