“I had a lot of fun today at Chef Alexis ' Choux Pastry Basics class. I learned how the pastry dough was supposed to look like, and feel like to the touch of a finger and how it resisted the drag of a spoon, and even how the taste and mouth feel changed as the cream puffs baked; things you can't get from a screen based product. I liked how she gave me tips and insight as we cooked; my instincts were generally right, but some things I would have over mixed or over cooked. She also showed how to respond to how things were going, not just blindly follow a recipe. I also got to take home 10 cream puffs and eclairs! Would do again!”
