“This was very salty and more dense and tougher than I expected. I boiled 20min per lb and 20min over, (starting from simmering point ) then put a mustard/honey glaze and roasted 15 min. I think I would have it on the bone next time, this was not the melting flesh I remember from the 1950's ! Also It would be easier to carve on the bone, possibly, it tended to fall apart although I retained 3 of the strings, but that made it difficult to peel the skin. Haven't eaten the other items yet.”

“Quite the best tasting gammon we've eaten, plainly poached in vegetable stock. From the 2 Kg joint, we've had 12 good portions for meals and quite a few sandwiches, including those we took on a picnic to Avebury on the second Sunday in January 2022 !”

“Tasty gammon that I cooked with a quince paste glaze. My only criticism was that the 2kg joint had only a small patch of fat and skin on, which rather spoilt the whole idea of having a glaze on a Christmas ham.”
