Duck is a distinctive, deeply flavoured meat that's fairly rich and a little bit indulgent. The duck carcass is less meaty than that of a chicken and is considerably fattier. Because ducks need fat to help them float you'll find a thick layer of fat running over the breast. Far from being a downside, the fattiness of duck works in its favour. It keeps the meat succulent and packs in a whole load of flavour. We've cooked our duck legs using the sous vide method. That means the meat is vacuum packed then very, very slowly poached in a bath of water that's kept at a consistent temperature. None of the juices – therefore none of the flavours – can escape during this gentle cooking process, so the end result is to-die-for tender and delicious.
