“I'd never had goat other than slow roast in olive oil in a greek taverna before so chops at home were a new experience. Now I would very happily have these in place of lamb anytime and am keen to try some other cuts. I left until room temperature, rendered fat and pan fried them in it with salt, pepper to MR and they were divine. I can see that marinating would tenderise even further ad will try next time. Just brilliant this meat is being made more available.”
