“OK, but everything just a bit small in concept. By which I mean: to get the best out of food it has to be generously proportioned and presented. The beef cut was too thin for a decent roast., Just OK for braising. I would have preferred a slightly smaller and thicker ie cubic cut, which would produce a good pink -in -the -middle roast. The chipolatas were very thin and had so little rusk that there was nothing to hold in the juice (which is partly the point of sausages), and they came out dry and chewy. but the flavour was very good. The bavettes (minute steak to you and me) were quite tough, even after bashing,and lacked that little bit of fat to hold in flavour. Not exciting. And so on. I feel strongly It needs a good cook/ chef to advise on preparation for the kitchen, and I also suspect that whatever is used to kill any bugs could be killing the flavour which, though sometimes faint, is generally very good. A word on packaging: lots of loosely packed ice packs which were still semi frozen the next day, but the food contents were starting to thaw at the edges when I opened the box (within minutes of delivery) which suggests that down at the ranch the food was standing for too long out of the freezer before being packed or that the looseness of the packing was to blame. Less stuff, tighter packing...? It's annoying as it shortens the storage time this end.”
