“If you like the chilli jam chicken (and I do - it's one of my favourite Dinner Ladies dishes), give this one a try. Their flavour profiles are very similar: coconut cream, capsicum, red onion, tamarind, chilli, fish sauce, lime leaves - all those lovely sweet, sour, warm, and funky flavours that make Thai food so appealing. I like to cook vegetables in the same pan so they absorb the same flavours, so I start by sauteing some spring onion, sugar snap peas, and broccolini, and add a little of the sauce. Then I clear a space in the pan to cook and flip the salmon. When nearly done, I add the rest of the sauce, cook for a couple more minutes, then serve with rice or noodles. A five-star dish.”
