“I was pretty sure from the description that I was going to love this one, and I was not disappointed.. Chicken thighs, miso, maple syrup, butter - all my favourite food groups. :-) While the cooked chicken was resting, I quickly stir-fried some capsicum, julienned carrot, julienned zucchini, broccolini, and spring onion in the same pan I'd cooked the chicken in. Then I sliced about half of the chicken, The serving size was huge - it would easily feed 3 people, maybe 4 - so I didn't need it all, I added the sliced chicken to the vegies, stirred the miso-maple butter through it, and served it all on udon noodles. It was divine, and there was still a generous serve of chicken left over to have in sandwiches the next day. My only complaint was that I had no more miso-maple butter left for the sandwiches! I suppose I should have exercised some restraint and kept back a little of the butter for next day. But miso, maple, butter... who can be restrained? (And the sandwiches were still delicious even without the extra butter.)”
