“The flavour was quite nice but unfortunately ended up quite soggy and leaked water around the plate after serving. Seemed to be mostly the eggplant which was leaking moisture. Perhaps baking the eggplant prior to assembly and using thinner eggplant slices would help to firm up the bake.”
