Great addition to a main protein, and easy way to get a veggie hit. Also instead of microwaving or using an oven, we used an air fryer for a quick reheat

Loved this and had it as my main meal - was enough to have a leftover lunch the next day to take to work. The addition of the roasted cashews was **chefs kiss**!
