“Generally, I like to give the Dinner Ladies meals my own small tweaks, such as putting green vegies and capsicum underneath chicken marylands before they go in the oven, or draining off the juices and turning them into a gravy just before serving, But there are some nights when I'm too tired. All I want to do is peel the plastic off a tray, bung it in the oven, and collapse on the couch. This meal is for those nights. There is literally nothing else you need to do - this dish is lovely exactly as is. Well, you could add a salad if you're feeling energetic enough. A vegetable with a bit of crunch such as radish or cucumber, some tomato, some green leaves, dressing, and that's it. Dinner is ready with less than five minutes' prep, and I promise you it will be delicious.”
