I bought this knife to replace several cheap knives because the blades were too thin and tended to bend under pressure. The Cold Steel Kitchen Classics Chef Knife has been a wonderful change. The spine of the blade is thick and strong. Cutting a watermelon or pumpkin is easier and safer. The 8-inch 4116 Cryo-Quenched, German stainless-steel blade holds an edge well and is easily restored with a ceramic sharpener. The 4-7/8" handle has a durable ZY-Ex core with a softer, food-safe, Kray-Ex non-slip outer. This takes the overall length of the knife to 13 inches. It is a pleasure to use for food preparation and it has been as good as knives I have used that were more than twice the price. It can cut onions to the finest thicknesses and cut a split down a whole, hard, pumpkin with ease. Carving meats and chopping vegetables like a professional, is now possible. A good kitchen knife must be safe to use, be well balanced, have a positive grip, be easy to clean, hold a sharp edge and not flex when cutting hard items like pumpkin. The Cold Steel Kitchen Classics Chef Knife, with its high quality, has not disappointed. Whether for the home or the camp kitchen, this knife would be an asset. A blade protector is recommended to keep the blade in top condition and prevent chipping.
