“I got the bison tenderloin and elk ribs and grilled them both to medium rare. The bison was fantastic! I prepare the elk to medium rare. It was very chewy, too chewy to eat. I put it back on my grill for another quick sear and thought that would do the trick. Unfortunately, it didn't. The elk rib chops were too tough and chewy. We ended up throwing out both elk chops. I hate to complain, but the elk was not very good. I emailed JHBM twice to let them know about the experience, but never heard back. I hate posting negative reviews but I was hoping someone from customer service would have reached out.”
