Fish naturally contains a high level of free glutamine, the meat would become harder when the fish is slaughtered. When the fish is cured with salt, water will be drawn out of microbial cells through osmosis. The end result is salted fish, a stable of North African, Southern Chinese, Scandinavian, the Arctic and coastal Russian diet.
Store in freezer. Please consume within 6 months.
