“Very happy with this fish butcher knife. The price is very reasonable. The blade does not have the characteristic shape of a willow leaf, but rather that of a Santoku (this is quite visible on the picture). The back of the blade is not concave, to make filleting less sticky or easier to sharpen. Anyway, it's a piece of monosteel steel. I imagine this is to keep costs down. Nevertheless, sharpening is made relatively easy by the AUS-8 of which the blade is made. It's the steel closest to European steel, so there's no risk of chipping on contact with edges. It's perfect for what it's meant to do.”
