Just the perfect knife for thin slicing sushi, meat or other delicate work. I chose it because I really wanted to try a high quality knife from Miyabi's rather top line with SG2 steel and I was not mistaken. Not to compare these knives, but I also have a KAI Shun Classic Ham Knife 23 cm with Granton Edge, Damascus Steel in VG-MAX and I will say that the Miyabi 6000MCT is just a samurai sword that cuts through everything like butter and without any effort thanks to SG2. The KAI, does not justify itself for its money, both in the quality of the steel (chipping even when cutting vegetables and meat) and the way it handles slicing. Also, the KAI does not retain its sharpness even on a very soft cutting board. Very satisfied with the knife.
