The truth is withthe first one i went from commi chef into Sous chef. This knife has done an insane amount of fish and an insane amount of wagyu. After all these years i’m still happy about it. It holds the edge. It’s getting crazy sharp if you do it properly. The weight of the knife is amazing. After hours of working you don’t get tired of it in your hand.
I think if i need to i’ll buy a third one after couple of years. So yeah ;)”
