Hi Ann, Thanks for leaving a review! Sometimes when sales are moving extremely fast, and you get an extremely fresh jar it can be a little firmer for the first week or so. It can also be a little firmer if you've just brought it in from outside and it's winter time (as it is now).
All it takes is leaving it a little while in a warm space (beside your stove or in the sunlight on a counter) and it will soften right up. You can also adjust how soft it is by storing it slightly warmer or cooler in your house (in a cupboard or in the fridge). It is also perfectly fine to use a stainless steel knife and give it a little stir. It won't take much at all. :)
