In this pillow soft cake, the juicy blueberries contrast with the tart rhubarb and all the flavours are tied together by the sweet Couverture white chocolate, which caramelises as it bakes. The cake is topped with my signature vanilla bean cream cheese icing, rhubarb coulis, freeze-dried blueberries and more white chocolate buttons.
