You have to be careful with cooking of wagyu. But when you cook it right, the flavour beams through! My method is around an hour in the sous-vide (water bath) for an hour (55 degree celsius) and then a quick 2-3 min sear on each side to finish. Was a beautiful and tender steak when done this way.

Was extremely impressed by this cut, was delicious very easy to cook with great marbling.
