“My personal favourite is a truffle Mayo.
But when you add olive oil to egg Mayo it makes it leaves a slight bitter taste.
I always find that the truffle tends to hide behind the bitter taste
When I make a Mayo I use very high quality sunflower oil,
brings out the flavour of the truffle.
Nobody uses it now as it is a lot more expensive, imagine you have to wait a whole year for one crop of sunflowers.
When you taste it , it’s worth it”
