Versatile balanced formula that is good both for ganache and couverture. One of the my go-to chocolates for chocolate making and cakes. Excellent customer service too.

One of my consistent favorites, it pairs well with many recipes which include fruit and citrus or nuts. Very rich, smooth, and melts quickly in the mouth. Melts well over cakes etc.

The most important thing to me is that the product be fresh, and these smelled, looked and tasted fresh. It is an easy product to work with when molding chocolate shapes or coating items. I am very pleased.

Here's a photo of the tempering example I mentioned in a previous comment. For the tempered chocolate, I simply heated it in short intervals in the microwave until most (but not all) of the chocolate was melted, stirred to melt the remainder, and then added a small portion of unmelted callets to drop the temp to just below 90 degrees F. For the untempered example, I zapped it in intervals until it was ~130 degrees F.

I teach a Kitchen Science Course and was looking for a chocolate that would work well to show students the difference between untempered and properly tempered chocolate. I used the microwave tempering process from the Callebaut site and it worked perfectly!

I bought these to bake with. They are rather expensive but worth every penny. They are the real deal. They melt easily so chocolate chip cookies cone out of the oven with the oozy goodness you expect. I would not go with anything darker or lighter.

but I love Callebaut chocolate. I've used it for years, and the only reason I didn't order the giant 11-pound bar was that I couldn't find it on your site. I chose callets instead, and in the past week I've used them twice to make chocolate chip cookies. Wasn't my recipe, so I can say without blushing that they were really yummy. When the big chocolate bar is available again, I'll order it immediately. Thanks. Margaret Maples
