“Here's a photo of the tempering example I mentioned in a previous comment. For the tempered chocolate, I simply heated it in short intervals in the microwave until most (but not all) of the chocolate was melted, stirred to melt the remainder, and then added a small portion of unmelted callets to drop the temp to just below 90 degrees F. For the untempered example, I zapped it in intervals until it was ~130 degrees F.”
