Cacao Barry Fleur de Cao 70% Dark Couverture Chocolate Pistoles Reviews

4.8 Rating 13 Reviews
This is my 2nd purchase of this 5kg bag, it’s said I’m really satisfied of well-balanced and fine taste of this chocolate. Using for any baking recepies or simply melt, cool down and garnish with dry fruits and nuts. I can’t run it out from my pantry!

Arrived in the time-frame presented at checkout. Price was fair. Shipping packaging and boxing was very well done. Pay the extra cost for temperature control if living in warm climate areas or its a warm time of the year.

This chocolate is so deliciously smooth and lacking any waxy affect it’s perfect for tempering or baking. Tcho is so hard it’s more of an eating chocolate. Scharffenberger, ghiradeli, and other chocolate wafers I’ve tried use far too much wax in comparison and lack the depth of flavor.

There's nothing wrong with this 70% chocolate. It melts well for tempering but is somewhat bland. I like a bit more assertiveness in my chocolate. Love Tainori from Valrhona and it tempers beautifully. I also like some beans from the Dominican Republic. That said, if you're looking for a chocolate that will blend well with other inclusions without hogging the spotlight, this would be a good choice. (I am not thrilled with the "real vanilla flavor" as opposed to vanilla, but that's not what struck me most about this chocolate.)
