While this is more than I typically spend on couverture, It is extraordinary. Incredibly well balanced in sweetness, fruitiness, with a rounded out flavor that has no discernible acidity or edginess. The velvety texture is sublime. This ch chocolate would pair beautifully with roasted nuts, cacao nibs, spices, seeds, toasted grains, etc., but might be a bit too much with dried fruit, or anything inherently sweet. Frankly, they are wonderful right out of the bag. You don’t need to be a chocolatier or pastry chef to appreciate these as, unadulterated, they’re perfection.
