I’m always on the lookout for good white chocolate for cakes and pastries. This time I’m trying Guittard Crème Francaise wafers (vs chunk), which should also be easier to weigh.

This chocolate has always delivered in my ganache fillings for my macarons. Very reliable no matter what flavor or colorings I use

I purchased a 3 kilo bag for advent calendar truffle making. The shipment arrived quickly, and the chocolate has been great in my ganaches so far. Next up using it for molding!

This white chocolate is great. Smooth and creamy texture. I plan to use it as a base for flavored ganache in bon bons (after I stop snacking on it, haha!)
