“The darkest cocoa I've worked with before is Hershey's Special Dark cocoa. This is dark chocolate for baking on a whole different level! This cocoa has a great aroma and delivers the darkest bittersweet chocolate taste. In the past, I have used dark chocolate half and half with regular cocoa for a good dark chocolate taste but a deeper brown color. I used this cocoa in a 1/3 mix, with 2/3 of the required amount using regular cocoa. It still gave the brownies a very dark, almost black color. (They tasted amazing!) I would also experiment in the future with increasing sugar by just a bit since it does perform more bittersweet in baking.”
