“Philistine that I am, the thick chocolatey fudginess of this bar was a surprise--not a bad one, to be sure, but not what I expected. Perhaps that's the grinding and conching? Perhaps there's more Trinitario than Criollo in the beans' genes? Who knows? MC is surprisingly quiet on the strains that its planters cultivate; noting Criollo, Trinitario, Nacional, etc., as well as, say, conching time, would be helpful.”
