Valrhona Extra Bitter 61% Dark Couverture Chocolate Feves Reviews

After years of trying various brands and styles, I have settled on Valrhona Extra Bitter 61% for truffles, barks, frostings, etc. If it calls for a good dark chocolate but still quite accessible, then I use this. I have even been known to tuck it into biscotti.
