“I tempered this chocolate and shipped my truffles in it. It turned out beautifully. I've had trouble the last couple of times using a different chocolate, so decided to suck it up and pay for the good stuff. This was easy to temper, was even a bit forgiving about temperature. It stayed in temper on a heating pad while I dipped multiple batches of candy. I'm very pleased with the Valrhona chocolate and will purchase again.”
