“Wow! The flavor of this chocolate is intense, as is all the other flavors in this line. I made a ganache with it. It's very fluid when combined so start with less cream or maybe use the butter ganache method. It removes a lot of the work that you would have to do in order to use fresh passion fruit puree. I haven't tried to temper it and use it as a coating yet. I might try to do the lazy method: melt it, then dip truffles and coat in powdered sugar. I'm making truffles for the holiday's (so I won't dip until December) with this as gifts and can't wait to hear the feedback on this super flavorful chocolate.”
